Ginger is thinly sliced, scallions finely chopped; both are briefly blanched in salted water and kneaded into a thin batter. A small amount of powdered licorice, known as "Guolao" or "Gan Cao," is added to reduce the spiciness. Shallow-fried in oil, the dish can dispel internal cold. According to Zhu's Annotations on the Analects of Confucius, "Ginger connects with the divine," hence the dish is so named.
