Brewing chrysanthemum wine is one of the oldest Double Ninth traditions. Han-era "Miscellaneous Records of the Western Capital" describes the method: "When chrysanthemums bloom, gather stems and leaves, mix with millet, and ferment until the next ninth day of the ninth month before drinking, hence called chrysanthemum wine." By the Tang, it was recorded in "Essential Formulas for Emergencies" for its health benefits. It also became a poetic motif for the festival.
