Tofu preparations became popular in the Song Dynasty. Su Shi's "Treatise on the Mutual Influences of Things" notes, "Frying tofu in bean oil gives it flavor." Southern Song's Lin Hong, in the "Home-style Dishes in Mountainous Areas," describes "Dongpo Tofu": "Stir-fry tofu with scallions in oil, add twenty ground torreya nuts with sauce to stew.
