Jelly refers to Chinese Honey Locust Fruit, which clears heat, moistens dryness, and reduces swelling. It was one of the most popular sweet treats of the Song Dynasty. Crystal Jelly is also called Sugar-Soaked Jelly, it's especially refreshing served over ice. Yin Qianshuang added Sichuan fritillary and snow pear to the jelly, creating a cooling tonic said to ease coughs, dissolve phlegm, and reduce inflammation.
