The tradition of brewing pine wine dates back to the Tang Dynasty. It was repeatedly mentioned in poems. Legend has it that when Su Dongpo served as prefect of Dingzhou, he brewed Mountain Pine Wine based on local brewing techniques and composed a poem, praising it as: "Sweet with a subtle bitter aftertaste. I sigh at its graceful loneliness, knowing sweet and sour easily spoil, I laugh at Liangzhou's grapes."
